Jasper Kitchen & JB's Bar

Jasper Kitchen and JB's Bar are serving ingredients supplied straight from their neighbour - Queen Victoria Market - in their new menu, following a seven million dollar refurbishment to the hotel property.

Jasper Kitchen and JB's Bar at the newly refurbished Jasper Hotel at 489 Elizabeth Street Melbourne is officially open for business following the boutique property's seven million dollar refurbishment this year.

Jasper Kitchen - which seats 50 - will be open seven days a week for breakfast, lunch and dinner between 6.30am and 11pm, whilst JB's Bar will be open for drinks and tapas from midday to 11pm. Head Chef Bruno Lima will be serving up seasonal, free range and organic produce sourced directly from The Queen Victoria Market - which is conveniently located right around the corner from the restaurant and bar!

Chef Lima began with Jasper Hotel in March 2012 - bringing with him more than 12 years of experience from Melbourne and overseas restaurants including Dock 31 and Vyve Café - at both of which he was Head Chef - as well as experience as Bluestone Bar Restaurant and the Hilton London Metropol - where he first began his career.

Chef Lima's Brazilian background shines through the JB's Bar Tapas Menu - where mouth-watering snacks like the Chilli Sauteed Calamari with Apple Saffron Aioli, Seta al Ajillo (mushrooms cooked in garlic, olive oil and chilli), sliders, gourmet pizzas and more will all be available between midday and 11pm each night; to be consumed by the bar or in the alfresco dining area that backs on to Elizabeth Street with a refreshing drink.

Chef Lima's extensive travel is the inspiration behind the Jasper Kitchen menu; influences from South America, Europe and Australia have led to his commitment to deliver a menu of uncompromising honesty, simplicity and freshness.

Jasper Kitchen entrees includes Tempura Soft Shell Crab, Vietnamese Chicken Salad and Braised Pork Belly. Diners can rest assured that they will receive the best quality meat cuts at Jasper - as Lima chooses to cut and bone his own meat and poultry rather that purchasing it pre-prepared.

Alongside taste, quality and presentation are what will set Jasper Kitchen apart from other four star hotel restaurants - the main meals include:the Shiitake Mushroom and Truffle Risotto; Free Range Chicken Breast wrapped in prosciutto, with potato fondant, witlof, an edible flower salad and balsamic chicken jus; Steamed Salmon Fillet with lemon grass, sweet corn puree, zucchini flower, wakame seaweed and soy mirin glaze; or the Herb Crusted Rack of Lamb with sauteed Chinese kale, sambal glazed parsnips and demi glaze. 

Plus the Grill Menu includes Grass fed or grain assisted beef with your choice of side and sauce from just $35.00.

And finally for dessert diners can choose from the Mango and Passionfruit Crème brulee; Warm Chocolate Fondant Pudding; Toasted Almond Pannacotta or a selection of Australian cheeses.

Jasper Kitchen will be at the forefront of modern, fusion dining at the top end of Elizabeth Street, which is currently known for its high quality ethnic cuisines.

The Jasper Kitchen's a la carte breakfast menu includes Homemade Bircher Muesli (made with fresh orange juice from the Queen Vic market) with Toasted Coconut, Oven Roasted Macadamia Nuts, and Shredded Apple & Honey topped with Natural Yoghurt and Fresh Seasonal Berries, Belgian Waffles, a Fruit Platter, An Omelette or Eggs your way, Stuffed Field Mushrooms and Jasper's Rustic Big Breakfast, which is Two Free Range Eggs cooked to your liking accompanied with Field Mushrooms, Thick Cut Smoked Bacon, and Chorizo Sausage & Tomato. Cooked and served in a Paella Pan with a side of Homemade Tomato & Apple Chutney & your choice of Sourdough Toast.
